bThis is a recipe called wheat berry tabbouleh. I made this last week. I chose to try this recipe because the picture in my cookbook just looked so wholesome and nutritious. It has wheat berries, cucumber, tomatoes, parsley, mint, and green onion. The dressing is lemon juice, oil and salt. 
I liked this salad, but lets just say I won't be making this my new potluck recipe. Turns out I am not a huge fan of wheat berries, and the combination of mint and parsley did not appeal to me. This recipe wasn't hard at all. Just boil the wheat berries, chop the veggies and herbs. Make the dressing and toss it. Easy enough. Didn't learn to much from this recipe. But hey, at least I started my goal.
I am trying out extra large pictures instead of large. Not sure if I like them this big or not... We'll see.
